There's one way on how to figure out NPC's resistances.
You'll need: 1 Unit of Missile Ship with 4 Missile Launchers of the Same Kind, and four different damage types of missiles (be wary of some ships give a specifical bonus to some type of damage, you'll have to take that into account); 1 Unit of Calculator II (just a side note, always have your Calculator II at hand when playing eve); Any amount of NPC Ships you want test resistances.
Now, once you've got everything, jump into your Ship, load launchers with missiles (one damage type for each launcher - 4 launchers, 4 damage types). Undock. Rightclick on your ship UI (shield/armor/structure/heat/capacitor thingie), select "Show Info". Browse to "Modules" tab, scroll down untill you find your fitted missiles, click on the 'i' icon (DO NOT use show info on missiles in your bay, they're not modified with your skills and ship bonuses there!). Write down damage type and damage stated in missile info. Now we're ready to go :). Go to your favourite NPC spawning place, pick any. You must make sure your target is either sitting down or movingreally really slowly. Fire all of your launchers. After last missile hits your target, finish it off or just warp away. open combat log window from your neocom. Write down the damage your missiles inflicted on your enemy next to the ones you're wrote down in previous step. Be sure not to mix up damage types here.
Now, considering you're in safe place, take your Calculator II and use the following formula to calculate your enemy's resistances: [Resistance] = (1 - [Damage Dealt]/[Raw Damage])*100%
Where [Resistance] is the NPC's resistance you're looking for, [Damage Dealt] is the damage your missile hit the NPC for, and [Raw Damage] is the damage figure stated in missile's info window.
example: "yyyy.mm.dd hh.mm.ss combat Your Paradise Cruise Missile hits Sansha's Overlord for 452.7 damage", and the number for Paradise Cruise Missile (EM damage) was 617.4: (1 - 452.7/617.4)*100% = 26.677% (EM)
note: do not try hitting fast-moving ships and ships, that has potentially lover signature radius than your missile's explosion radius (i.e. don't shoot cruise missiles at frigates) or you'll get false results.
